Fuel your day with this vibrant, nutrient-packed power bowl! Featuring kale, crispy roasted sweet potatoes, broccoli, and protein-rich chickpeas, all topped with a creamy Greek yogurt sauce—this bowl is as satisfying as it is healthy. Perfect for meal prep, lunch, or a light dinner.
Ingredients:
1 lb (450-500g) of sweet potato + 2 garlic cloves, salt to taste, 1/4 tsp black pepper, 1/2 tsp paprika, 1/2 tsp Italian seasoning, 2 tbsp olive oil
1 1/2 cup of cooked and drained chickpeas + salt to taste, 1/4 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, 1/2 tsp Italian seasoning, 1 tbsp of olive oil
1 small broccoli head + salt to taste, 1/4 tsp black pepper, 1/2 tsp garlic powder, 1 tbsp olive oil
Sauce:
1 cup Greek yogurt
1 garlic clove
2-3 tbsp fresh dill
1 tbsp lemon juice
1-2 tbsp of water to thin the sauce
salt to taste
2-3 cups of kale
1-2 scallions for garnish
Roast sweet potatoes and chickpeas at 400F (200C) for 15 minutes, add broccoli and roast for another 15 minutes.
