🥣 Soft & Spongy Dahi Bade Recipe (Halwai Style)
🛒 Ingredients (Samagri)
Bade ke liye:
1 cup urad dal (dhuli)
1 tbsp moong dal (optional – extra softness ke liye)
1 tsp adrak (barik kati hui)
1–2 hari mirch
Namak swad anusar
1 pinch hing
Tel – talne ke liye
Dahi Mixture:
2 cup fresh dahi (thick)
2–3 tbsp cheeni (optional)
Namak swad anusar
½ tsp bhuna jeera powder
Thoda sa kala namak
Garnish:
Imli ki chutney
Hari chutney
Lal mirch powder
Bhuna jeera powder
Anar ke dane (optional)
Sev (optional)
👩🍳 Step-by-Step Method
Step 1: Dal Soak Karna
Urad dal (aur moong dal agar use kar rahe hain) ko 5–6 ghante ya overnight pani me bhigo dein.
Step 2: Batter Banana
Dal ka pani nikal kar mixer me bina zyada pani ke smooth paste bana lein.
Batter halka aur fluffy hona chahiye.
👉 5–7 minute tak ek hi direction me phent lein.
👉 Test: Thoda batter pani me daalein – agar upar aa jaye to perfect hai 👍
Step 3: Bade Talna
Kadhai me medium heat par tel garam karein.
Haath ya spoon se chhote balls daal kar golden brown hone tak fry karein.
Step 4: Pani Me Soak
Fry kiye hue bade ko garam pani me 10–15 minute bhigo dein.
Phir halka sa press karke extra pani nikal dein.
Step 5: Dahi Prepare Karna
Dahi ko achhe se phent lein.
Isme namak, cheeni, kala namak aur jeera powder mila dein.
Step 6: Assemble Karna
Bade ko serving plate me rakhein.
Upar se dahi daalein.
Phir imli chutney, hari chutney, lal mirch powder, jeera powder aur anar se garnish karein 😍
