കടലിൽ നിന്ന് ഞങ്ങൾ പിടിച്ച തിരണ്ടി മീൻ വച്ച് ഒരു അടിപൊളി അച്ചാർ
The ingredients to marinate 2 kg fish
Red chilli powder-1tsp
Turmeric powder-1tsp
Black pepper powder 1 tsp
Salt to taste.
Marinate the fish with the above ingredients and keep it aside for 15 minutes
The other ingredients
Oil-1 cup
Vinegar-1 cup
Ginger-1cup (finely chopped)
Garlic-1 cup (finely chopped)
Green chillie-20
Curry leaves half cup
Mustard seeds-1tbsp
Fenugreek seeds-half tbsp.
Asafoetida/Kayam-1tsp
Salt to taste
Red Chilli powder-3tbsp
Turmeric powder-1tsp
Crushed raw mustard-optional
The cup used here is 280ml
Heat oil in a pan
Add ginger and let it fry till it turns brown and crispy and remove it from the oil and keep it aside
To the same pan add garlic and let it fry till it turns brown and remove it from the oil and keep it aside
Then add the green chillies and fry them and remove it from the pan when they are cooked
Fry the curry leaves and keep it aside in another plate
Fry the fish in the same oil till they are cooked well, do not let it burn or do not let it get too hard
In another pan dry roast the mustard, fenugreek and asafoetida till the seeds splutter or turn brown
Crush these and keep it aside
To the same oil where the fish is fried add turmeric powder, chilli powder and a cup of vinegar (turn off the flame before you add the chilli powder and turmeric). Turn the flame on and let it the mixture boil and add all the fried ingredients. Crush the curry leaves with your hand before adding it into the mixture.
Add in the dry roasted spices.
Mix them well and cook them for 2-3 minutes
Keep it aside and let it cool down
Transfer it into an air tight container after the pickle has cooled down
