This is how you flatten chicken breasts. First, cover your cutting board with plastic wrap. Lay the chicken breasts on top and cover with another piece of plastic. If you don't have plastic wrap, you can use waxed paper instead. Use the flat side of a meat mallet, or another heavy implement, like a rolling pin to hammer the breasts flat. You don't need to use much force, but make sure you hit them firmly and evenly working your way from the middle out. When they're flattened, pop them on a plate until they're ready to be cooked.
