One Pan ‘Baked’ Feta Pasta 🥫

Ingredients
• 250 g pasta (penne or rigatoni work best)
• 200 g feta block
• 1 cup cherry tomatoes
• 1 cup stock or water
• 1/2 cup cream
• 1 tsp garlic powder (or 2 minced cloves)
• salt to taste
• parmesan, grated (optional for extra creaminess)
• Optional: fresh basil or parsley, for garnish
Method
1. In a non stick pan, add the tomato, pasta, cream, stock, and garlic powder. Place the feta block in the middle.
2. Bring to a gentle simmer, you can stirring occasionally if you’d like. Add a little extra stock or water if the pasta isn’t fully covered.
3. Continue cooking until the pasta is tender and the sauce has thickened and turned creamy.
4. Stir through the parmesan (if using), then season with salt and pepper.
5. Garnish with fresh herbs and serve warm.
