Hi friends! Today I’m sharing one of the easiest and prettiest Southern cookie recipes you can make at home. These Strawberry Cool Whip Crinkle Cookies are soft, sweet, and full of that classic pink charm you see at bake sales, baby showers, and holiday dessert tables!
They’re made with just four simple ingredients and come together in one bowl. A box of strawberry cake mix, Cool Whip, an egg, and powdered sugar are all you need. The dough does need chilling, which helps the cookies hold their shape and gives you those beautiful crinkles once baked.
The secret to the crinkle finish is rolling the chilled dough in powdered sugar before baking. The outside bakes up lightly coated and the inside stays soft and tender.
I bake mine slightly longer than some viral versions so they hold more like a classic cookie, but you can easily adjust the bake time depending on how soft you prefer them.
These cookies are budget friendly, beginner friendly, and perfect for Valentine’s Day, Mother’s Day, potlucks, gift bags, or a cozy afternoon with a cup of tea.
Recipe:
1 box strawberry cake mix (15.25 oz)
8 oz tub Cool Whip, thawed
1 egg
1 cup powdered sugar
Instructions:
1. Add the strawberry cake mix, egg, and thawed Cool Whip to a mixing bowl.
2. Mix on low to medium speed until fully combined. The dough will be thick and sticky.
3. Cover the bowl and chill for at least 1 hour or preferably overnight.
4. Preheat the oven to 350°F and line a baking sheet with parchment paper.
5. Add the powdered sugar to a small bowl.
6. Lightly spray a cookie scoop with oil and scoop portions of chilled dough.
7. Roll each scoop in powdered sugar until fully coated.
8. Place on the baking sheet, leaving space between cookies.
9. Bake small cookies for 9 to 11 minutes or larger cookies for 10 to 14 minutes until set around the edges but soft in the center.
10. Allow cookies to cool fully on the baking sheet before transferring.
