Here's what you will need for Chicken Tikka Biryani:-

List1: For Marination of Chicken tikkas-
Boneless chicken- 400gms
Yogurt- 4tbsp
Ginger garlic chilli paste- 1tbsp
Lemon juice- 1tsp
Chilli powder- 1/2tsp
Cumin powder- 1/2tsp
Coriander powder- 1/2tsp
Garam masala- 1/2tsp
Salt- as required
Oil- 4tbsp for frying the Chicken tikkas

List 2: For Rice-
Good quality Basmati rice- 300gms
Cardamom- 5-6
Cinnamon- 3 inch
Cloves- 5-6
Salt- 1tbsp
Water- enough

List 3: For Gravy-
Oil- 5-6tbsp
Onions (sliced)- 3 medium
Ginger garlic chilli paste- 1tbsp
Tomato puree- 1tbsp
Yogurt- 4tbsp
Cumin powder- 1/2tsp
Coriander powder- 1/2tsp
Biryani masala- 2tbsp
Green chillis- 2-3
Salt- As required
Water- 1/2cup (3/4cup or 1cup if you need the gravy to be more runny)
Coriander leaves- a handful (optional)
Mint leaves- 8-10nos (optional)

List 4: For the layers of Biryani-
Warm milk- 1/4cup
Saffron- a pinch (8-10threads)
Kewra water- 1tsp
Biryani essence- 2-3drops
Ghee- 1-2tsp for greasing the pan (   • GHEE/ CLARIFIED BUTTER from butter| Wander...  )
Coriander leaves- a handful (optional)
Mint leaves- 8-10nos (optional)
Fried onions- a handful (optional)

Process:-
1. Marinate the chicken pieces- Add all the ingredients mentioned in the marination List 1 and let it rest for at least 2hours.
2. Cook the rice- Wash the rice snd soak it for 30-45mins. Boil enough water in a pot, add the whole spices (mentioned in List 2), and salt. Now add the rice and allow it to cook until 80% done. Drain the water or strain the rice from water. Transfer the rice into a large wide vessel, so that the extra heat escapes away.
3. Put some oil in a pan. Let it heat in a high flame. Place the chicken pieces. Allow it to cook from one side and then flip. Cook the other side too the same way. This takes 8-10mins to get tender. Take them out and keep them aside.
4. Put oil in a wok or kadhai. Heat in high flame. Fry the sliced onions until they are golden brown and soft. Now lower the flame to medium and continue the process. Add ginger garlic chili paste. Saute for 1min. Add the remaining marination. Saute for some time. Add tomato puree. Saute for some time. Now add yogurt and stir continuously until everything is well combined and oil starts to separate. Once the oil separates, add cumin powder, coriander powder, biryani masala, green chilis, and salt. Saute for some time, add water accordingly and wait until it boils. The gravy is done. You can add the chicken tikkas into the gravy or keep them separate.
5. Add saffron, kewra water, biryani essence into warm milk and keep it aside for 5mins.
6. In a heavy bottom pot, arrange the biryani layers. Put some ghee and grease the bottom and sides. Now add a layer of rice. Then spread the gravy. Now place the tikkas on the gravy. Again spread a layer of rice. Now pour the warm milk evenly. You can add coriander leaves, mint leaves, and some fried onions. Cover the lid. And place the ready pot on low flame for 10mins.
7. After 10mins, remove from flame and keep it covered for 10 mins more. Now serve Chicken tikka biryani with raita.
