Amazake (甘酒) is a sweet, low-alcohol Japanese fermented drink made from rice.
Kōji is added to cooled rice which causes enzymes to break down the carbohydrates into simple unrefined sugars. As the mixture ferments it develops a natural sweetness.
Amazake is rich in fibre and is also a good source of probiotics.
Ingredients:
1 bag of Kōji - available at most health shops or Asian supermarkets.
1 cup of rice - any rice will work however I finde mochi rice to work the best.
Water (enough tho fill to the 3 cup mark in a rice cooker).
Also needed:
Rice cooker with "Keep Warm" available.
Clean cloth to cover while fermenting.

Directions:
Add 1 cup of rice to a rice cooker
Fill with water to the 3 cup level in the rice cooker.
Cook on porridge mode until done.
One rice is cooked, bring the temperature of the rice down to between 60c to 70c.
Add kōji when in between those temperature ranges.
Mix the kōji in well with a sterile spoon.
Add back to the rice cooker with the lid left open and set the cooker "Keep Warm", cover with a clean cloth and let sit for approximate 10 hours, stirring every 2 hours to help maintain the temperature throughout the mixture.
When done, store in a refrigerator for up to two weeks.
Serve with any plant-based milk; ie rice, soy, almond.
Is also great added to smoothies and breakfasts cereals.
