Traditional Iranian Ghormeh Sabzi
Ingredients (for 4 servings):
300–400 g lamb or beef leg, cut into pieces
1 cup red kidney beans or pinto beans (soaked overnight)
1 large onion
About 500 g Ghormeh Sabzi herbs:
• 250 g leek
• 150 g parsley
• 70 g cilantro
• 30 g fresh fenugreek
• 30–40 g fresh garlic leaves or spring onions
3 dried limes (limoo amani)
Oil – as needed
Salt, pepper, and turmeric – as needed
Persian Rice (Plain Chelo)
Ingredients (for 4 servings):
3 cups Persian rice
Water – as needed
4 tablespoons salt
3 tablespoons oil or butter
Shirazi Salad
Ingredients:
2 cucumbers
2 tomatoes
1 small white or red onion
1 lemon
1 teaspoon dried mint (optional)
