(Kek Batik Indulgence)
note: i used 10x10 inch square tin! best to get those removable base so it’s easier that way!
ingredients:
Base:
Two packets of Marie biscuits
250g unsalted butter
200g condensed milk
1 cup milo powder
3/4 cup milk
1/2 cup cocoa powder
pinch of salt
splash of vanilla
Cream cheese layer:
3/4 tbsp bovine gelatin (halal)
3 tbsp of hot water
250g cream cheese
50g castor sugar
1 tbsp vanilla essence
1 tbsp condensed milk
200ml whipping cream
chocolate ganache layer:
300g dark choc
100g cadbury milk choc
250ml whipping cream
1 tbsp vanilla essence
Process
(1) break up the marie biscuits into fours and set aside. In a pan, melt the butter and mix in the condensed milk. Add in milo powder, cocoa powder, milk, vanilla essence and a pinch of salt
(2) Mix it all in till it thickens up and switch off the heat once small bubbles form, mix in the biscuits and transfer to a 10x10 inch square tin lined with baking paper. Mash it down as much as you can and chill in the fridge
(3) Activate the gelatine with hot water and mix till it is melted. In a bowl, mix in room temp cream cheese, sugar, condensed milk, vanilla essence and the mixed gelatine.
(4) In a separate bowl, whip up the cream till stiff peaks and fold it in with the cream mixture.
(5) Pour the cream mixture into the chilled pan and pop it in the freezer while you prepare the chocolate ganache
(6) Use double boiler to melt the chocolates and add in whipping cream and vanilla essence and switch off the heat once it is well incorporated!
(7) Pour the ganache over (poke the small bubbles with the end of a fork if needed) and chill in the fridge overnight
(8) Using a serrated knife, dip it with hot water and then wipe off before slicing for a clean cut. Repeat till done.
