In this restaurant training video, we address causes of cross contamination by dirty equipment, and in particular the industrial can opener, that should be cleaned, as and when and especially when opening things that contain allergens, such as chickpeas. But more importantly, must be cleaned during closing checks.
As you can see here this opener has not been cleaned in sometime and if you look closer to the blade, it is congealed with old food different types of allergens and potentially you have a chemical contamination with possible rust.
It is important to clean your industrial can opener as and when and certainly during closing checks. during closing checks.
