蒜香牛油忌廉煮蜆 CLAMS IN CREAMY GARLIC SAUCE
材料 Ingredients
蜆 600克 / 600g clams
蒜頭 6瓣 / 6 cloves garlic
洋蔥 1湯匙 / 1 tablespoon onion
無鹽牛油 3湯匙 / 3 tablespoons unsalted butter
白酒 110毫升 / 110ml white wine
雞湯 110毫升 / 110ml chicken broth
忌廉 100毫升 / 100ml whipping cream
黑胡椒碎 1茶匙 / 1 teaspoon black pepper
檸檬 1/2個 / 1/2 lemon
芫茜 1茶匙 / 1 teaspoon coriander
鹽 適量 / salt, to adjust紹興酒 適量 / Shaoxing wine, to adjust
做法 Method
1. 加鹽、紹興酒和油在水中,放入蜆浸30分鐘,待吐沙。沖水洗淨,盛起備用。
Add salt, Shaoxing wine and oil into water. Soak the clams for 30 minutes to purge sands. Rinse and drain well for later use.
2. 洋蔥、蒜頭和芫茜切碎。
Finely chop the onion, garlic and coriander.
3. 檸檬切角備用。
Cut the lemon into wedges and set aside.
4. 鍋內下2湯匙牛油,開中火燒熱後下蒜頭、洋蔥碎炒香。
Add 2 tablespoons butter in the pot and heat it over medium heat. Sauté the finely chopped garlic and onion until aromatic.
5. 加入蜆、白酒和雞湯,蓋上鍋蓋,煮至蜆殼打開。
Add the clams, white wine and chicken broth. Cover and cook until the clams just open.
6. 打開鍋蓋,加入黑胡椒碎、餘下的牛油和忌廉拌勻。
Open the lid, add black pepper, the remaining butter and whipping cream, and mix well.
7. 熄火,擠出檸檬汁加入蜆中,再把檸檬和芫茜碎加入鍋中增添香氣,完成。
Turn off the heat, squeeze the lemon and add the juice into the clams. Then put the lemon wedges and chopped coriander into the pot to add flavour, serve hot.
