These zucchini sticks come out juicy inside, with a crunchy golden edge. Perfect with a dipping sauce, yogurt, or just as they are.

INGREDIENTS

• Zucchini (courgettes) — 700–800 g / 1.5–1.75 lbs
• Whole wheat flour (or all-purpose flour / breadcrumbs) — 50 g / ⅓ cup
• Parmesan cheese, grated — 50 g / ½ cup
• Olive oil (or any vegetable oil) — 50 ml / 3 ½ Tbsp
• Himalayan pink salt (or regular salt) — to taste
• Black pepper, ground — to taste
• Fresh parsley (for garnish) — 10 g / ⅓ oz (about 2 Tbsp chopped)
