Mexican Wedding Cookies
2 cups butter softened
4 cups all purpose flour
1 cup confectioners sugar
1 tsp vanilla
1 cup chopped pecans
cream butter and sugar for 5 to 7 minutes
gradually add flour. bake for 12 minutes at 350.

Raspberry Thumbprint Cookies
Ingredients:
1 Cup butter, softened
1 C. Sugar
1 Large Egg
1 Tbl. Vanilla
1 tsp. Salt
2 1/2 Cups Flour

7 oz bittersweet chocolate
2 cups walnuts (optional)
2/3 cup Raspberry Jam
Directions:
Cream butter and sugar on high speed about 5 minutes until fluffy.
Add egg, vanilla, and salt mix.
Mix on low and add flour in 2 batches.
Melt chocolate in separate bowl. Either in microwave stirring every 30 seconds. Or over the stove.
Add melted chocolate to dough and mix with a spoon or by hand.
Bake at 350 degrees for 8 to 10 minutes.
Press thumb into cookie while still warm . Add Jam.
