Cupcakes are small, individually-sized cakes that combine the perfect balance of sweetness and charm. Cup Cakes Recipe:
Makes 12 cup cakes
Ingredients:
2 cups self-raising flour, sifted
3/4 cup caster sugar
3/4 cup milk
125g butter melted
2 eggs
1 teaspoon vanilla essence
Sprinkles to decorate
Cupcake Method
1. Preheat oven to 180°C.
2. Place paper cases in a 12 x 1/3 cup capacity muffin pan.
3. Combine flour and caster sugar in a bowl and make a well in the centre.
4. Add milk, butter, eggs and vanilla to flour mixture.
5. Using a wooden spoon, stir gently to combine.
6. Spoon mixture into prepared muffin pan.
7. Bake for 12 to 15 minutes at 180°C or until a skewer inserted into the centre comes out clean.
8. Stand in pan for 5 minutes before transferring to a wire rack to cool.
Icing
2 cups pure icing sugar sifted
2-3 tablespoons milk
2-3 tablespoons melted butter
Food colour of your choice
Icing Method:
1. In a mixing bowl, add the sifted icing sugar and melted butter.
2. Add 2 tablespoons of milk and mix well. Add more milk if needed to reach your preferred consistency.
3. If the mixture is too think, add a small amount of milk (1/2 teaspoon at a time). If it’s too thin, add bit more icing sugar.
4. Add a dash of food flavouring for colour.
4. Spread over cupcakes. It will set as it cools.
Styling Tip:
Display iced cupcakes on a tiered stand or a decorative platter to create visual interest. Use matching cupcake liners for a cohesive look, and sprinkle toppings like coloured sugar or sprinkles to complement the icing. For a finishing touch, add small edible decorations like edible flowers, fruit pieces, or themed toppers. Arrange the stand with a few fresh flowers or ribbons for an elegant presentation.
