Do you ever crave salads? I’m always down for a good salad that’s crunchy and easy to put together.
This salad has everything that I like. It reminds me of good summer days. The crisp kale, nutty Parmesan cheese and pomegranate goes so well together, it’s a match made in heaven with simple yet delicious dressing of olive oil and lemon juice. I wouldn’t mind having this everyday for lunch.

Ingredients
Veggies
Kale 4 cups
1/4 sliced red onion
1/2 cup Pomegranate seeds
1 Apple cut into cubes
Chicken marination
2 chicken thighs
1/2 tsp garlic, onion, paprika powder
Salt for taste
2 tbsp olive oil
2 tbsp lemon juice
1 tsp butter
Dressing
1/4 cup lemon juice
1/4 cup olive oil
1 tbsp honey
1 cloves of garlic
Salt and black pepper
1/4 tsp dry parsley
2 handfull Parmesan cheese
