The focus is all about getting the foundation right — building custom spring mounts, fabricating dog-leg shackles, building a radiator hoop and mounting the steering box to bring this rig one big step closer to the trail.

🥗 Jess’s Chicken Salad Recipe

Ingredients:
• ~½ cup pecans, toasted
• 1 cup mayo
• 3 tbsp Greek yogurt
• 2 tbsp honey Dijon mustard
• 1 tbsp stone-ground mustard
• 1 tbsp lemon juice
• 1 tbsp fresh dill, chopped
• Salt & pepper to taste
• 4 cups cooked chicken, chopped or shredded (canned chicken works great)
• 1 cup red grapes, halved
• 1 small–medium Granny Smith apple, chopped (skin on)
• ⅓ cup red onion, finely chopped

Instructions:
In a large bowl, whisk together mayo, Greek yogurt, mustards, lemon juice, dill, salt, and pepper. Add chicken, grapes, apple, red onion, and toasted pecans. Stir until evenly coated.

Serve on a croissant, sandwich bread, or over lettuce.
This recipe is easy to modify — use less mayo, more Greek yogurt, or swap ingredients to your taste.
