Beat the summer heat with this Refreshing Paan Malai Kulfi — a creamy, flavorful and absolutely delightful frozen treat! Made with chopped dry fruits, condensed milk, dry rose petals and a paan-flavored twist using gulkand and saunf, this kulfi is perfect for hot days. Try this unique twist to traditional kulfi and surprise your family with its refreshing taste.
❇️Kulfi Ingredients:
✔️1 litre full-fat milk
✔️2 tbsp finely chopped almonds (badam)
✔️2 tbsp finely chopped pistachios (pista)
✔️3 tbsp condensed milk
✔️1 tbsp dry rose petals (crushed)
❇️Paan Flavor Mix:
✔️6 fresh paan (betel) leaves
✔️6 tbsp gulkand (1 tbsp per leaf)
✔️2 tsp saunf (fennel seeds)
✔️2 tbsp chopped dry fruits
✔️2 tbsp fruit jelly (small pieces)
✔️1 cup chilled milk (for grinding)
❇️Step-by-Step Recipe:
🔘Prepare the Milk Base:
In a heavy-bottomed kadhai, add 1 litre milk and boil on low flame until it reduces to half.
Add chopped almonds and pistachios.
Mix in 3 tbsp condensed milk and crushed dry rose petals.
Cook for 2-3 minutes until it thickens like rabri. Turn off the heat and let it cool.
🔘Make the Paan Mixture:
Wash 6 paan leaves properly.
On each leaf, add 1 tbsp gulkand, a little saunf, chopped dry fruits, and fruit jelly.
Roll and pack them tightly.
Add these rolls to a mixer jar with 1 cup chilled milk and grind into a smooth paste.
🔘Combine & Freeze:
Mix the paan paste into the cooled milk mixture.
Pour the mixture into kulfi moulds.
Freeze overnight or at least 7-8 hours.
🔘Demould and enjoy the refreshing taste of paan malai kulfi the next day!
