The wrapper for these dumplings is made with wheat starch. It is a good opportunity for using your steamer ;-) Please try it with as many filling variations as you like!

Ingredients (for 5 people) :
300g unpeeled shrimps (net weight 160g)
320g ground pork
1 tbsp cooking sake https://amzn.to/3PiF59a (or cooking white wine)
200g leek
1/2 tsp fine salt
1/4 tsp white pepper powder
1 egg white
2 tbsp water
1 tsp fresh ginger
1/2 tsp sugar
1 tbsp sesame oil
1 tbsp potato starch
3 tsp soy sauce
3 tsp oyster sauce
For the wrappers :

500g boiled water
