Everyone passes by them in the grocery store without a first or second thought. Those mysterious dark green globes you see year round. Not all squash are created equal! Acorn squash are smooth and delicate when cooked with a buttery texture and sublime sweetness. The hardest part about most squash is cutting through that tough shell, however a sharp, heavy knife makes short work of it and soon you will be experiencing a taste sensation that will leave you asking yourself why you never had them before! Follow my super easy recipe and soon you’ll be looking for them, rather than passing them by! Also fantastic without the sugar for a sugar-free option !!

INGREDIENTS:
1-2 Acorn Squash
2 tsp. McCormick Grill Mates Chipotle And Roasted Garlic Seasoning
1/2 Cup Rosemary Flavored Olive Oil
2 Tbs. Dark Brown Sugar
DIRECTIONS:
Preheat Oven to 375 Degrees F
Line a large baking sheet with parchment paper.
Using your sharpest knife, chop off the stem end by rocking the knife back and forth.
Stand the squash on the cut end, and proceed to cut down the middle from the top as to form two sides.
Using an ice cream scoop or spoon, scoop out the seeds and pulp.
Place one of the halves cavity side down and cut into 1- 1/2 inch wide C shape.
Place your half moon shape pieces onto the baking sheet and brush with the rosemary olive oil.
Sprinkle the Chipotle seasoning on next to taste.
Sprinkle lightly with the dark brown sugar to taste and pat down lightly,
Place in pre-heated oven and roast for 45-60 mins. Or until desired tenderness is achieved.
Remove from oven and use spatula to place onto serving dish and ENJOY!!
