ingredients for vegetable mix;
1/2 small can black beans (rinse and drain)
1 small can black eye peas (rinse and drain)
Corn kernels (12 oz bag-thawed)
Chopped small;
Celery 2 tbsp
Red onion 1/2 c
Red bell pepper 1/2 c
Cilantro 2 tbsp
De-seed;
Roma tomato X2
cucumber (1 whole)
Jalapeño pepper (1 whole)
Toss all ingredients in vegetable mix. Then add dressing. Wait @ least 30 minutes, serve.
Dressing;
1/2 c Olive Oil
1/2 c apple cider vinegar
2 tbsp sugar
Salt & pepper to taste
