We are officially in the Christmas countdown and I still hadn’t made a single cookie, which is just not okay around here. So today I’m making a spumoni inspired Christmas cookie for my holiday cookie platters. It’s cherry, chocolate, and pistachio inspired, although I’m using pecans because that’s what I had and we’re just going with it.
I start with one base dough, split it into three, and then add the flavors and colors to make these really fun, festive cookies. They do take a little more time than my usual recipes, but if you’ve got the time and the inspiration, they’re worth it. They freeze beautifully, bake up soft with a little crunch on the outside, and they look so pretty on a platter. This is cookie number one for Christmas this year and I think it’s a good one.

My Version - Spumoni Inspired Christmas Cookies
Base Dough
¾ cup butter, softened
1 cup white sugar
½ cup light brown sugar
1 large egg plus 1 egg yolk
1 teaspoon vanilla
2½ cups all purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Cream butter and sugars for about 3 minutes. Beat in egg, egg yolk, and vanilla. Mix in dry ingredients just until combined. Divide dough evenly into three portions.
Cherry Dough
¼ cup finely chopped maraschino cherries
3 tablespoons flour
Mix into one portion until pink and evenly combined.
Pistachio Inspired Dough
½ cup chopped pecans
¼ teaspoon almond extract
Green food coloring to desired color
Mix gently into second portion.
Chocolate Dough
2 tablespoons cocoa powder
⅓ cup chopped chocolate or chocolate chips
2 teaspoons maraschino cherry juice
Mix into final portion.
Assembly
Take small pieces from each dough
Roll together into one ball
Roll balls in sugar
Chill 10 to 20 minutes or refrigerate up to 3 days
Baking
Bake at 350°F for 14 to 16 minutes
Space cookies about 3 inches apart
Shape gently with a ring while warm if desired
Yield
About 44 cookies depending on size
