Marry Me Slow Cooker Chicken - serves 2 (copied from Bored of Lunch on Instagram)
2 large chicken breasts
1 medium onion diced
1 tsp thyme
1 tsp oregano
2 garlic cloves
1-2 tbsp tomato puree or red pesto
200ml chicken stock
200ml double cream
fresh basil
Harrisa Tabbouleh - serves 2 - 626 cals (use vegetable stock to make vegetarian)
1 butternut squash
2 garlic cloves
120g bulgar wheat
1 lemon
chicken/veg stock - 200ml
baby plum tomatoes
greek style natural yoghurt (I used fat free)
fresh mint (1bunch)
20g walnuts (could use flaked almonds)
Chorizo & Honey Feta Pasta - serves 4
1 whole block of feta cheese
1 whole pack of baby plum tomatoes
300g penne
120g chorizo
drizzle of olive oil or use firelight
drizzle of honey
1 tbsp Italian seasoning
salt & pepper
