Описание:
A tasty fettuccine in a creamy zucchini sauce. With full white pasta my version clocked in at 17 WW points. You can be that lower with a a chickpea or whole wheat pasta and reduced fat parm to full fat parm. Light butter would help too.
Ingredients:
8 ounces fettuccini -weighed uncooked, about 225g
3 cups zucchini, diced
2 tbsp butter
2 tbsp minced garlic or a little garlic powder
1 cup chicken broth
1 cup cream or reduced fat half & half
3/4 cup reduced-fat shredded parmesan cheese
Pinch of salt & pepper
Directions:
1. Boil a large pot of water and cook the fettuccini noodles as directed on box.
2. Dice the zucchini.
3. over medium heat, melt butter and add in garlic and zucchini. Cool through until zucchini is a little soft.
4. Transfer the sauce mix to a blender and blend on high for 2 minutes, until the sauce is creamy and there are no chunks of zucchini.
5. Pour the sauce back into the skillet. Heat over medium heat, add in the chicken broth, and cream. Stir lightly but often. Then add in the fettuccini noodles and gently stir.
6. Add some salt & pepper to taste. Let cook for 5-8 minutes until the noodles are nice and hot, serve immediately.
