As I had an abundance of peppers.. so many colours and types, I decided to create a cowboy candy that looks so appealing with it’s many colours! It is water-bath canned and shelf stable!

Cowboy Candy Recipe
3-4 lbs hot peppers of mixed varieties (jalapeños, sugar rush peach, buena mulata, arapaho, Hungarian wax, pumpkin spice jalapeño)
2 cups apple cider vinegar
2 cups sugar
2 cups packed brown sugar
3 tsp. Garlic powder
1/2 tsp. Cayenne pepper
1/2 tsp. Celery seed
1/2-1 tsp. Tumeric
Cut off stems and remove seeds from peppers. Chop peppers in food processor to small pieces and place aside. Add remaining ingredients into large pot and bring to boil. Lower heat and simmer 5 minutes. Add chopped peppers bring to boil, lower heat and simmer exactly 4 min. Remove peppers with slotted spoon into prepared canning jars. When all peppers are out of syrup, bring back to a boil and simmer again for 6 minutes. Ladle hot syrup over peppers mixture filling to 1/4-1/2 inch headspace from top. Wipe rims well with vinegar, place on new lids and rings and process 15 minutes in water bath.
Yield: approx 12 1/2 cups jars
