Beer-Braised Chipotle Tacos by Point Of View Chef
Ingredients:
3-4 pound Chuck Roast
1 Large Onion
3 Medium Tomatoes
8 Cloves of Garlic
Chipotle Peppers in Adobo Sauce
4oz of Chopped Green Chiles
2 Bay Leaves
16 oz of Guinness Stout or a hoppy IPA (Don't like beer add beef stock)
Spices:
1 TBSP of Chili powder
1 TSP Cumin
1 TSP Coriander
1 TSP Onion Powder
1 TSP Paprika
2 TSP of Kosher Salt
Instructions:
Do a rough chop on the Onion and Tomatoes.
Rough chop on eight cloves of Garlic.
Add to a Vitamix or Food Processor/Blender.
Add your spices
Add 3 Chipolte peppers (add more if you're close to a restroom)
Add 2-3 TBSP of the adobo sauce
Blend and puree until smooth
Start the saute setting on the Instapot, and add some olive oil and sear the chuck roast on all sides.
Add the pureed sauce mixture over top of the chuck roast. It’s like a pre taco meat bath.
Now top with your favorite craft beer, I prefer a stout or a nice hoppy IPA for this recipe.
If you don’t have a beer, substitute for beef stock won’t’ be as festive, though.
Add two bay leaves (optional)
Place the lid on the pressure cooker and lock.
Steam release knob should be set on “sealing.”
Cook on manual setting (high pressure) for 70 minutes
Now let's remove the beef from the Instapot and grab a fork and remove any excess fat and begin to shred the meat... if it still feels tough, throw it back in the pressure cooker for about 10 minutes or so on high.
Don't have a pressure cooker use crockpot on low for 8 hours or 4 hours on high.
Add the meat back to the Instant pot on set to warm and season with salt and pepper to taste.
