Here are two rules that helped me learn how to side kick in sparring and fighting.
Rule 1: Defensively, don't use the side kick as a wall. Instead of trying to stop the train, derail it. That means you must step off the tracks. You can step out with the front foot or back foot.
Stepping out will not only stop you from getting run, you'll also be able to pivot more easily because your foot is already turned out.
Another advantage is that you'll be placing yourself at a superior angle after the kick, ready for follow ups. The last advantage is that against a grappler, you'll be forcing him to shift his weight and change directions, which will give you a chance to defend the shot.
Rule 2: Move him back, then attack. If you want to land a kick, set it up with your hands first. Otherwise, it's easy for him to catch your foot or counter.
In addition, when you get your opponent moving backwards, YOU won't get knocked backwards.
Don't forget to step out and attack on an angle just like you should when you're under attack. Take a superior angle whenever you can!
One last thought for you to consider... instead of thinking of a side kick as you turning to your side to throw a kick, think of a side kick as moving to the bad guy's side to throw a kick. Keep that in mind and you'll be landing more side kicks than ever.
