I made this beef bacon, an experience that proved to be quite difficult - not necessarily the process, but dealing with the lean nature of the meat - something I never thought I'd say about brisket - but compared to pork belly- it doesn't even compare on that front. also, in hindsight I think that next time I'm inclined to do the following:
Use slightly less salt, or employ better drainage method.
More sugar - its lacking that very distinct sweet note that I associate with bacon
less of a curing time
separate the meat into thick and thin parts - the unevenness of thickness makes it incredibly salty in some parts, and better balanced as others.
These curing experiments are very fun though! We're getting interesting results. Also, the egg process is sooo delicious - well worth a go!
