How to make cavatelli by hand

For the dough:
1 1/2 c ap flour
1 c semolina flour
1 c luke warm water
Mix flours together and form a well, add water to the well, slowly begin incorporating flour into water untill it becomes a rough dough, knead for 10 minutes or untill smooth, cover and let rest for a half hour. After rested cut a couple ounces of dough of with bench scraper and roll into a rope about the with of a pencil. Use your bench scraper to cut rope into 1 in. lengths. Use three fingers to press each piece and then drag dough towards you creating the indentation perfect for catching sauce! Move to a floured sheet tray and continue process untill you’ve worked through all your dough and now your ready to boil in salted water and enjoy some delicious completely handmade pasta!!!
