I love this recipe, its easy to make & any left over paste can be frozen and used for future recipes. There looks like a lot to do but once you have everything prepped its quite quick to make. It is packed full of flavour & you could use, beef, chicken or even Tofu.
Ingredients:
For The Paste:
1 tbsp coriander seeds
1 tbsp cumin seeds
4 x garlic cloves (peeled)
1 x thumb size ginger (washed & roughly chopped)
1/2 thumb size fresh turmeric (careful preparing this, you can also use 1tsp turmeric powder)
1 x red chilli
1 x lemon grass (peel off outer layers, lightly bash & roughly chopped)
3 tbsp veg oil
Handful fresh coriander
4-6 lime leaves
juice of one lime
Optional:
1 tsp of palm sugar
For The Curry:
1 x large onion (finely sliced)
400ml plum tomatoes
4-6 baby aubergines (quartered)
handful fresh Okra
400g fresh prawns (if using cooked prawns add these at the last minute just to warm through)
fresh coriander
salt to taste.
