Mutton Lamb Chap (also known as Mutton Chap Masala) is a delicious, aromatic dish made with tender mutton (lamb) pieces, cooked in a rich and flavorful gravy. It’s usually slow-cooked to bring out the best of the spices and meat. Here’s a simple recipe to make it at home:
Ingredients:
Mutton (lamb) chops – 500g (preferably with some fat for extra flavor)
Onion – 2 large, finely sliced
Tomatoes – 2 medium, chopped
Ginger garlic paste – 2 tbsp
Green chilies – 2, slit
Yogurt – 3 tbsp
Oil – 3 tbsp
Ghee (optional) – 1 tbsp for extra richness
Coriander leaves – 2 tbsp, chopped (for garnish)
For the Marinade:
Yogurt – 2 tbsp
Turmeric powder – 1/2 tsp
Red chili powder – 1 tsp
Ginger garlic paste – 1 tsp
Cumin powder – 1 tsp
Garam masala powder – 1 tsp
Salt – to taste
Lemon juice – 1 tbsp
Oil – 1 tbsp
Whole Spices:
Cinnamon stick – 1-inch piece
Cloves – 3-4
Green cardamom – 2
Black peppercorns – 4-5
Ground Spices:
Coriander powder – 1 ½ tsp
Cumin powder – 1 tsp
Red chili powder – 1 tsp
Garam masala powder – 1 tsp (optional)
Salt – to taste
Method:
1. Marinate the Mutton Chops:
In a bowl, mix together yogurt, turmeric powder, red chili powder, cumin powder, garam masala, ginger garlic paste, salt, lemon juice, and oil.
Add the mutton chops and coat them evenly with the marinade.
Cover and let it marinate for at least 1-2 hours, preferably overnight for better results.
2. Cooking the Mutton:
Heat oil and ghee (optional) in a heavy-bottomed pan or pressure cooker.
Add the whole spices (cinnamon, cloves, cardamom, and peppercorns) and sauté for a minute until aromatic.
Add the finely sliced onions and sauté till they turn golden brown. This step is important for flavor development.
Add the ginger garlic paste and green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
3. Cooking the Tomatoes:
Add chopped tomatoes to the pan and cook until they turn soft and the oil starts separating from the masala.
4. Adding the Marinaded Mutton:
Add the marinated mutton chops to the pan and sauté for 5-7 minutes, stirring occasionally, so the meat absorbs all the flavors from the onions and spices.
Add the ground spices: coriander powder, cumin powder, red chili powder, and garam masala powder. Stir well.
5. Simmer and Cook:
If you're using a pressure cooker, add about 1 cup of water, close the lid, and cook for 3-4 whistles (or about 20-25 minutes).
If you're using a regular pan, add enough water to cover the meat, bring it to a boil, then reduce the heat and let it simmer for about 45 minutes to 1 hour or until the meat is tender and the gravy thickens.
6. Final Touches:
Once the mutton is cooked, check the seasoning and adjust salt if needed.
Garnish with fresh coriander leaves.
Serve:
Serve the Mutton Lamb Chap hot with naan, paratha, or rice. The rich gravy and tender meat make this dish irresistible!
Tips:
If you want a richer taste, you can add cashew paste or almond paste to the gravy.
For extra smoky flavor, you can use the dhungar method by adding a piece of charcoal, heating it till red, and placing it on a small bowl inside the pot with a bit of ghee for 5 minutes. This will give your dish a smoky aroma.
