Mandarin fish is the representative work of Su Bang cuisine with both color and flavor. It is said that Emperor Qianlong went to the south of the Yangtze River and took a micro suit to Suzhou songhelou restaurant for dinner. The chef took carp out of the bone, carved patterns on the fish meat, marinated it with seasoning, dragged egg yolk paste, fried it in a hot oil pan, and poured hot sweet and sour brine. It looks like a rat. It is crisp outside and tender inside, sour and sweet, Emperor Qianlong was very satisfied after eating and became famous in Suzhou.
In September 2018, Mandarin fish was selected as one of the top ten classic dishes in Jiangsu.
