Описание: Tusheti is located in the northern part of the Eastern Georgia, over the major watershed of the Greater Caucasus, at an altitude of 1650-4493 m.a.s.l. To the north Tusheti is bordered with a system of high mountains of the Greater Caucasus, which greatly influences the microclimate of Tusheti depression. It is being manifested by an averagely warm alpine climate and precipitation. It is the very climate that determines diversity, wealth and fertility of the territory's flora and herbage.
Tusheti Traditionally, the Tushs are sheep  herders. Tushetian Guda cheese and high quality wool was famous and was exported to Europe and Russia . Even today sheep and cattle breeding is the leading branch of the economy of highland Tusheti. The local shepherds spend the summer months in the highland areas of Tusheti but live in the lowland villages of Zemo Alvani and Kvemo Alvani in wintertime. Their customs and traditions are similar to those of other eastern Georgian mountaineers 

ABORIGINAL SHEPHERD DOG 🇬🇪
Georgian Shepherd or Nagazi breed is the result of selection done by native people of Georgia. The first representatives of the breed appeared in the north-east of the country. The species originates from Tibetan Mastiff and was used for the multiple daily tasks. The Nagazi accompanied shepherds, helping them to take care of the herds. Their main task was to chase away wolves and bears from the sheep. Georgian Shepherd were also used as guard dogs to protect property. There is a legend that one Nagazi tore wolf to pieces while protecting younger member of the family.

GUDA CHEESE :
Produced in the remote mountainous region of Tusheti, Tushuri guda takes its name from the sheepskin sack in which the raw-milk cheese is traditionally ripened. The skin is turned inside out, so the wool is in direct contact with the ripening cheese. Archaeological evidence suggests that sheep cheese made in a similar way existed in present-day Georgia as long as 6,000 years ago; and a particular native breed of Tusheti sheep on which guda relies for its unique richness, flavor, and aroma has been continuously raised and grazed on the lush mountain grass here for almost 1,000 years.
The milk comes from a native breed of Tusheti sheep, called for the ethnic group (Tush) who have long raised animals in this area. Milk yield from this breed is relatively low, with only about 1 glass of milk each day.
In the guda the cheeses are aged for a minimum of 60 days .
