🍽️ Crispy Potato & Peanut Fried Rice with Curry Leaves! 🍽️
Try this easy, aromatic, and flavorful Potato Fried Rice made with potatoes, curry leaves, green chilies, peanuts, chana dal, dried chilies, red chili powder, turmeric, ginger-garlic paste, lemon, and fresh coriander. A perfect quick lunch or dinner recipe full of crunch, spice, and tang! 😋
Ingredients:
cumin seeds 1tsp
mustard oil ½tsp
Potato – 1 (diced)
Curry leaves – a handful
Green chili – 1-2 (sliced)
Peanuts – 2 tbsp
Chana dal – 1 tbsp
Dried red chili – 1-2
Red chili powder – 1tsp
Turmeric powder –1 tsp
Ginger-garlic paste – 1 tsp
Salt – to taste
Cooked rice – 1 Bowl
Lemon juice – 1 tsp
Fresh coriander – for garnish
Oil – 2 tbsp
Method:
Heat oil in a pan. Fry chana dal, peanuts, and dried red chilies until golden.
Add curry leaves, green chilies, and sauté for a few seconds.
Add diced potato, ginger-garlic paste, turmeric, and red chili powder. Fry until potatoes are slightly crispy.
Mix in cooked rice and salt. Toss well on low flame for 2-3 minutes.
Finish with lemon juice and garnish with fresh coriander. Serve hot!
