Pinwheel

For the Spinach Roti
Ingredients
Whole wheat flour (Atta)- 1 cup
Salt - ½ tsp
Spinach purée (blanched & puréed) - ½ cup
Olive oil - 1 tsp

Method:-
In a large mixing bowl, add whole wheat flour along with salt & mix well.
Now add spinach purée and using the moisture of the same make a soft, pliable dough. The dough should not be too soft or too hard.
Drizzle olive oil and knead a little to smoothen the dough.
Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Now take a small portion of dough and roll out with the help of a rolling pin & make a roti.
Heat a tawa over medium flame and cook the roti from both sides well. Keep aside to cool down completely.

For The Paneer Spread
Cottage cheese (paneer)- 200 gm
Mayonnaise - ¼ cup
Salt & pepper - to taste

For The Colourful Filling
Purple cabbage (chopped )- ½ cup
Red bellpepper (chopped)- ½ cup
Yellow bellpepper (chopped)- ½ cup
Salt & pepper - to taste
Chilli flakes- ½ tsp
Mixed herbs - ½ tsp
White vinegar - 1 tsp
Entra virgin olive - 1 tsp

Method:-
In a blender jar, add paneer along with mayonnaise & season with salt and pepper.
Blend it to a smooth paste. Keep it aside.
Now, In a mixing bowl, add all the veggies along with seasonings and vinegar and olive oil. Mix all together. Keep aside.

For assembly
Take prepared spinach roti, spread a thick layer of the paneer mixture evenly all over the roti.
Now, put the veggies mixture all over the roti and gently roll it from one side.
Keep the rolls in the refrigerator for about an hour.
Once the rolls are set and chilled , cut them into 1 inch thickness.
Transfer to a serving platter and serve chilled.
