🥖 High-Protein Cottage Cheese + Egg White Baguette (Yeast Bread)
Soft • Fluffy • Protein-Packed
⏱️ Bake Time
• Baguettes: 400°F (205°C) for 16-18 minutes
Make 8 small baguettes
Ingredients
• 2¼ teaspoons (7 g) active dry yeast (1 packet)
• ⅓ cup (75 g) lukewarm water
• 2 cups (500 g) egg whites (about 15–16 large egg whites)
• 2 cups (500 g) cottage cheese (2% or 4%)
• 6½ - 7 cups bread flour (start with 6½ cups)
• 1 tablespoons kosher salt
• Extra flour for dusting
Instructions
1. Activate the Yeast
Mix yeast with 2 tablespoons of lukewarm water. Let sit 5–10 minutes until foamy.
2. Blend the Protein Base
Blend cottage cheese and egg whites until completely smooth (no curds).
3. Combine
Pour blended mixture into a large stand mixer bowl and mix in the activated yeast.
4. Add Flour & Salt
Gradually add flour and salt. Start with 6 1/2 cups flour.
Dough should be soft, elastic, and slightly tacky - not dry.
5. Knead
Knead 8–10 minutes (stand mixer preferred) until smooth and stretchy.
6. First Rise
Place dough in a lightly greased bowl (avocado oil recommended). Cover and let rise 60–90 minutes, until doubled.
7. Shape
Punch down dough and shape into 8 small baguettes or 4 extra large loaf.
8 Second Rise
Cover loosely place in a dry warm place (oven recommended for rising) and let rise 60-120 minutes or until doubles in size.
Bake
Bake at 400°F (205°C)
• Baguettes: 18 minutes (16-18 minutes depending on your oven )
• Can also make 2 Full loaves: 35-45 minutes (depending on your oven )
Bread is done at 190–195°F (88–90°C) internal temperature.
Cool before slicing.
