Rice Idli Recipe
Ingredients
Moong rava – 2 cups
Urad dal (whole or split) – 1 cup
Fenugreek seeds (methi) – 1 tsp
Salt – to taste
Water – as needed
Method
Wash & soak
Soak rice and urad dal separately for 4–6 hours.
Soak methi seeds with urad dal.
Grind
Grind urad dal first to a smooth, fluffy batter using cold water.
Grind rice to a slightly coarse batter.
Mix both batters together, add salt, and mix well.
Fermentation
Cover and allow batter to ferment 8–12 hours in a warm place.
Batter should double in volume.
Steam
Grease idli plates.
Pour batter into moulds.
Steam for 10–12 minutes on medium heat.
Serve
Cool for 2 minutes, remove idlis gently.
Tips for Soft Idlis
✔ Use good quality urad dal
✔ Grind urad dal until light & airy
✔ Do not over-ferment
Serve With
Coconut chutney
Sambar
Chutney powder + ghee
