Rompope is a drink that dates back to the 17th century, created in the convents by the amazing nuns. Allow me to share with you the story of Eduviges and the recipe for this wonderful drink, in time for the holidays. I have 3 versions so you can choose which one you like the most, or you can come up with one of your own.
Ingredients (Vanilla rompope):
4 c Milk
1 c Sugar
1 Cinnamon stick
1 Clove
6 egg yolks
2 tsp Vanilla
1/2 c Rum
Dulce de leche rompope:
4 c Milk
1 can Dulce de Leche
1 Cinnamon stick
6 egg yolks
1 tsp Vanilla
1/2 c Rum
Cafe de Olla rompope:
4 c Milk
1 c Sugar
1 Cinnamon stick
1 Clove
1/2 Star anise
3 tbsp Instant coffee
6 egg yolks
1 tsp Vanilla
1/2 c Rum
1 shot Licor del 43
