Ingredients and Directions for Bavarian Spare Ribs on Cabbage in Masonry Stove:
General Information:
Portions: 2 (Please note: with 1 kilo (2.2 pounds) of ribs it might sound like a lot per head, but ribs contain a lot of bones!)
Preparation: 20 minutes
Cooking-time: 140 minutes
Waiting-time: none
Ingredients (US-Units):
Spare ribs (2.2 pounds)
White cabbage (1.1 pounds)
Potatoes (1.1 pounds)
2 Onions
1 TBSP Caraway
Water (25 fl. oz.)
2 TBSP Salt
1 TBSP Pepper
1 TBSP Paprika powder
Ingredients (Rest of the World – Units):
Spare ribs (1 kilogram)
White cabbage (0,5 kilogram)
Potatoes (0,5 kilogram)
2 Onions
1 TBSP Caraway
Water (750 ml)
2 TBSP Salt
1 TBSP Pepper
1 TBSP Paprika powder
Preparation of food:
1. Cut of the ribs membrane, wash them, dry them off and spice the ribs with salt, pepper and paprika powder.
2. Cut the white cabbage into pieces and place them into the baking dish. Then add some caraway seeds. Add water into the dish and place the ribs on top.
3. Peel the potatoes and cut onions into quarters and place them around the ribs.
4. Cook at 160 to 180° Celsius (320 to 360 degree Fahrenheit) with the lid closed for around 90 minutes. Then cook it another 50 minutes without the lid on inside the oven or on the grill with the lid closed. Check if there is still water inside the baking dish as you may have to refill some water later.
