The Base (Dough)
All-purpose flour (Maida): 1 cup
Clarified Butter (Ghee) or Oil: 3–4 (this is for
"Moin"—the fat that ensures the snack is flaky, not hard).
Water: As needed to knead a stiff dough.
The Flavoring :Fenugreek Leaves (Methi): 1/2 cup of finely chopped Fresh Methi
Carom Seeds (Ajwain): 1 tsp
Cumin Seeds (Jeera): 1 tsp
Salt: To taste.
Asafoetida (Hing): A pinch (Optional)
For Frying
Vegetable Oil: For deep frying on low-medium heat to ensure the nimki cooks evenly inside.
