Peri Peri Masala Recipe
Ingredients
10–12 dried red chilies (Kashmiri for color, or bird’s eye for heat)
1 tbsp paprika (smoked if possible)
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp dried thyme
½ tsp black pepper
½ tsp cumin powder
½ tsp coriander powder
½ tsp sugar (optional, balances heat)
Salt to taste
½ tsp citric acid or dried lemon peel powder (optional, for tang)
Method
Dry roast dried red chilies on low heat for 1–2 minutes until aromatic. Cool completely.
Add chilies and all remaining ingredients to a spice grinder.
Grind into a fine powder.
Store in an airtight container (keeps well for 2–3 months).
