This is one of my all-time favorite comfort food recipes👩🍳 It uses mild green chiles so there is no heat in this recipe. Just delicious soul warming goodness!
MEXICAN SPOON BREAD
1 cup yellow cornmeal
1 teaspoon salt
½ teaspoon baking soda
¾ cup milk - I USE WATER and it turns out fine
⅓ cup vegetable oil
2 eggs, beaten
1 can cream-style corn
½ cup green chiles
1½ cups grated extra sharp cheddar cheese - I use Tillamook
Combine wet ingredients first and then dry. Pour half of batter into hot pan with small amount of oil in bottom of pan. Put half of green chilis on cornbread. Add half of the cheese then remaining cornbread batter. Top with remaining green chilis. Reserve remaining cheese until later. Bake in 400 oven for about 42 minutes then top with remaining cheese and cook for another few minutes until cheese is melted. Total cooking time is about 45 minutes
