Trial #2 of a pellet smoked brisket , 18lb choice grade this time and cooking this fat side up to see if it makes a difference. Using salt and pepper as a base and topping the seasoning with meat church holy gospel , we let it rest for 30min while fire up the Traeger using mesquite pellets and we set it the temp to 200 degrees /super smoke on the upper rack with water/apple juice pan under to protect meat we let it go for 12 hours then increased temp to 225 for another 2 hrs at the 14th hr we finally pushed threw stall and we wrapped foil boat method and increased the temp to 250 degrees and at a total of 17hrs we hit 203-205 .rested in oven at 170 with -35 calibration for 4hrs and this this was amazing ,caramel color fat that foil method is no joke . Super juicy the cutting/slices at the end is no joke . Thank you for watching
