Tips for Finding Antique (Authentic) Sinistea in Pokemon Scarlet and Violet

Only look in the fields south of Alfornada, not the ruins above the town, and use a short Pokemon that is close to the ground so that Sinistea tips forward to make it easier to see the stamp.
A way to check what form of Sinistea you have already caught is, to check to see if the Cracked Pot is usable to evolve it. If the Cracked Pot says it is not compatible, that means it is Antique, and must be evolved using the Chipped Pot instead. There is a fixed spawn of a single Cracked Pot in the overworld in the autumnal area just north of Casseroya Lake, and there is a single Chipped Pot in the overworld on a ledge behind some houses at the southeastern edge of Porto Marinada. Additional Cracked and Chipped pots are obtained from the auctions in Porto Marinada after completing the Water gym.
