CHINESE STEAMED GARLIC SPARERIBS
1 rack of pork back ribs
1 tablespoon chopped ginger
1 tablespoon chopped garlic
1 tablespoon fermented black beans
1 1/2 teaspoon salt
1 teaspoon oyster sauce
1 teaspoon sesame oil
1 teaspoon light soy sauce
2 tablespoons cornstarch
Wash rack of ribs in cold water. Boil a pot of water and pour the water over both sides of the ribs to get rid of some of the fat and get rid of some of the impurities. Cut rack into individual ribs and put into a large bowl.
Chop up ginger and garlic. Add ginger, garlic and fermented black beans into a bowl. Add oyster sauce, sesame oil, cornstarch and light soy sauce into the bowl. Mix ingredients and put on top of the ribs.
Bring water to a boil in a large pan. Put dish of ribs into the pan and cover with a lid. Steam ribs for 1 to 2 hours, depending how tender you want the ribs. We steamed the ribs for 1 1/2 hours and they turned out very tender. The next day, we steamed the leftover ribs for another 1/2 hour and tasted even better.
