Veg Pulao Recipe
Ingredients:
1 cup Basmati rice
1 cups water
1 onion (thinly sliced)
1/2 cup mixed vegetables (carrot, beans, peas, potato)
2 tbsp oil or ghee
1 tsp cumin seeds
1 bay leaf
2 cloves
1 small cinnamon stick
2 green cardamoms
1 tsp ginger-garlic -green chilli paste
1 slit green chili
1 tsp biriany masala
Salt to taste
Few mint or coriander leaves
Method:
Wash the rice and soak it for 30 minutes. Drain and keep aside.
Heat oil or ghee in a pressure cooker or deep pan.
Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon. Fry for a few seconds till aromatic.
Add sliced onion and sauté until golden brown.
Add ginger-garlic paste and green chili. Sauté for 1 minute.
Add chopped vegetables. Cook for 2–3 minutes.
Add biriyani masala and salt. Mix well.
A soaked rice and gently mix.
Pour 1 cups of water and stir once.
Close the lid and cook:
Pressure cooker: 1 whistles
Pan: Cook covered till rice is soft and water is absorbed.
Turn off the flame and let it rest for 5 minutes.
