Fanta Cake 🍫🍊🍰

6 eggs, separated
80g flour
100g sugar
50g cocoa powder
1 tsp baking powder
50g melted butter
50g oil

250g mascarpone cheese
250g ricotta cheese
200g soft butter
80g sugar
14g vanilla sugar

780ml smooth orange juice (bought from shop or naturally squeezed at home)
100ml water
10 tbsp cornflour
5 tbsp sugar
50g butter
METHOD:
For the sponge: Whip egg whites till stiff with an electric hand mixer. Next, beat egg yolks and sugar using the same mixer for about 2 minutes (in a different bowl). Add oil and melted butter, gradually, while mixing. After that add the flour, cocoa powder, bakibg powder while beating.
Now fold in the stiffly whipped egg whites. Make sure that you fold in slowly and gently. Pour batter to a medium rectangular baking tray (32 x 26cm). Then bake in preheated oven at 180°C / 350F for about 20 - 30 minutes. Remove from oven and cool completely.
Now make the white filling with mascarpone and ricotta cheese: Beat softened butter, sugar and vanilla sugar in the bowl of a stand mixer. You could also do this with an electric hand mixer. Add mascarpone and ricotta. Continue beating. Be careful not to overmix.
Next make the orange topping: Heat orange juice in a large pan. Meanwhile, whisk cornflour, sugar and water. Pour this cornflour mixture into the hot orange juice and stir on low heat till thickened slightly. Add butter, then cool completely.
Now assemble the cake! Everything should be at room temperature, so the sponge, the white cream and the orange jelly topping. Evenly spread the white mascarpone ricotta cream on top of the chocolate sponge cake. Pour orange topping onto the top coating it evenly. Leave in the fridge for 4 - 5 hours or overnight.
Trim edges if wished, slice and enjoy! It is perfect on warm days because it's very refreshing!
