Easy Chili Soup Recipe
Olive oil for sautéing vegetables
2 cups frozen pepper and onion mix
1- 14.5 ounce can of low sodium tomatoes (could also use a low sodium tomato/ green chilies mix for extra spice)
½ teaspoon smoked paprika
2 tablespoons chili powder
1- 15 ounce can low sodium chili beans in sauce
8 ozs protein (I used leftover brisket, but you could use lentils, ground beef, or plant based ground)
1 cup low sodium broth, or dark beer
If needed: Thicken with 1 Tablespoon cornstarch mixed with 2 Tablespoons water
Toppings:
Cheese
Additional vegetables
Sour cream
Sauté peppers and onions in olive oil. Add in ingredients in order and simmer for at least 30 minutes up to an hour (the longer it cooks the softer the texture will be). Thicken using cornstarch mixture as desired. Top with items of your choice!
