Chinese Takeout Crispy Lemon Fish
Ingredients:
For the Fish:
250g fish fillet (use any fish/white fish you like, I used gourami fish)
½ lime
2 tbsp soy sauce
1 tbsp Chinese cooking wine (Shaoxing wine)
1 egg white
1.5 cups flour
¼ tsp MSG or mushroom stock
¼ tsp white pepper
½ tsp garlic powder
For the Lemon Sauce:
½ onion, finely chopped
1 clove garlic, finely grated
Juice of 1 lemon
1 tbsp finely grated lemon zest
100 ml chicken or fish stock
1 tbsp soy sauce
2-3 tbsp sugar (adjust to taste)
2 tsp cornflour dissolved in 2 tbsp cold water
Method:
1. Wash the fish with lime, then cut it into nugget-sized pieces.
2. In a bowl, combine soy sauce, cooking wine, and egg white. Add the fish pieces and mix until well combined. Marinate for 20 minutes. Set aside.
3. Mix the flour with MSG, white pepper, and garlic powder.
4. Coat each piece of fish in the flour mixture, making sure each piece is well coated. Use your hands to pat and press the marinade and flour together around the fish pieces to form a craggy coating.
5. Heat oil in a wok or pan over high heat. Test the oil's readiness by dipping a wooden spoon into the oil; if little bubbles form around the spoon, the oil is ready.
6. Shake off any excess flour from the fish pieces and add them to the oil one by one. Fry until golden and cooked through. Drain on a kitchen towel. Continue with the remaining fish.
7. In a pan, heat a little oil and add the chopped onion. Fry until fragrant.
8. Add the garlic and stir-fry briefly.
9. Pour in the stock-soy sauce mixture and bring it to a bubble.
10. Add the lemon zest and lemon juice mixture. Taste and adjust the seasoning if necessary.
11. Once the sauce is bubbling, add the dissolved cornflour and stir until the sauce thickens.
12. Add the fried crispy fish to the sauce and mix well.
13. Sprinkle the dish with sliced green onions and sesame seeds.
14. Serve over rice in a Chinese takeout box.
