Sabudana khichdi is a classic Maharashtrian fasting dish made with sabudana pearls (tapioca), boiled potatoes, roasted peanuts, green chilies, cumin seeds and finished with lemon juice and cilantro. It is traditionally prepared during Hindu fasting days like Shivratri, Ekadashi, and Navratri, using sendha namak (rock salt) and without onion or garlic.

Ingredients
1 cup Sabudana Tapioca pearls
1 Potato Cook, peel, cubed
2 Green chilli Finely chopped
½ Lemon
¼ cup Roasted peanuts crushed
1 teaspoon Ghee
Salt Sendha namak
To Temper
1 tablespoon Ghee
1 teaspoon Cumin seeds
1 sprig Curry leaves
When done right, sabudana khichdi is light, fluffy, non-sticky and flavorful, with each pearl remaining separate yet soft. Despite using minimal spices, the dish relies heavily on technique, especially proper soaking, draining excess moisture and controlled cooking over medium heat.
This is a high-energy dish that keeps you full for hours, thanks to the combination of carbohydrates from sabudana, healthy fats from peanuts and ghee and potassium from potatoes. Every Indian home has its own method, but the core principles remain the same: well-soaked sabudana, correct heat, and gentle handling.

Tips for Non-Sticky Sabudana Khichdi:
✔ Soak sabudana with just enough water, no excess
✔ After soaking, drain completely and fluff with fingers
✔ Sabudana should crush easily between fingers, not feel wet
✔ Always cook on medium heat, never high
✔ Add sabudana only after potatoes are well sautéed
✔ Do not over-stir, gentle tossing keeps pearls separate
✔ Lemon juice goes at the end, never while cooking
This no onion, no garlic vrat-style sabudana khichdi turns out fluffy every single time when the basics are right.

CUP MEASUREMENTS
Measurements used in all the recipes, unless otherwise specified. My cup measurements are as follows:
1 Cup = 240 ml
½ Cup = 120 ml
¼ cup = 60 ml
⅛ cup = 30 ml
1 Teaspoon teaspoon = 5 ml
1 Tablespoon (tbsp) = 3 teaspoon = 15 ml
2 Tablespoon = 30 ml = ⅛ cup
4 Tablespoon = 60 ml = ¼ cup
